Chicken - Easy roast chicken pieces with potatoes

I got the basic idea for this  pseudo recipe from "How to Cook Everything" by Mark Bittman.

Easy Roast Chicken Pieces

  1. Pre heat the broiler to 400 degrees.
  2. Take the skin off of a bunch of chicken drumsticks or thighs.
  3. Alternately, leave the skin on because you read somewhere that chicken skin good for you.
  4. Slice a bunch of potates into about 1/2 inch slabs. The idea is to cut them the right thickness so that they are done about the same time as the thighs.
  5. Mix some oil with a couple cloves of chopped garlic, some onion salt, some basil, and some oregano. The oil should look thick and pasty.
  6. Brush it all over the chicken and potatoes.
  7. Alternately, toss the chicken and potatoes in the oil because you read somewhere that lots of oil is good for you.
  8. I put the potatoes in a roaster pan with the chicken on top.
  9. Roast uncovered in the broiler, checking frequently. Stir them around occasionally so they brown evenly.
  10. When everything is just about done, throw in some sliced red bell peppers and sliced mushroom and stir into the mix.
  11. Roast a little longer until the potatoes are done.
  12. Put the chicken in one bowl, and the vegetables and potatoes in another.
  13. Sprinkle with parmesan and paprika, just because.
  14. Serves as many as you want.
Alternate flavouring: Use curry powder instead of oregano. Add some chopped fresh or frozen ginger (a tablespoon or two?) and some soy sauce. For vegetables, add some chopped Chinese cabbage first (brushed in oil mixture), then add the mushrooms and bell peppers at the end.
